steamerOutdoor Steamer Clams – This savory clam recipe is without a doubt, perfect for those gorgeous summer days when you are lucky enough to be able entertain your guests outdoors. Cooked in a cast iron skillet, over an open fire, or BBQ, we gave them a subtle sweetness, by adding coconut milk. A simple recipe that is a great snack to set out for everyone.

Ingredients to make Outdoor Steamer Clams

36 steamer clams, cleaned
1 cup coconut milk
1/2 cup clam juice
1/4 cup fresh lime juice
1 teaspoon minced fresh ginger
1/4 cup chopped cilantro
2 teaspoons red pepper flakes

Directions to make Outdoor Steamer Clams

Step 1:Prepare a wood or charcoal fire and let it burn down to embers. Place a cast iron skillet on the grill and allow it to heat up to almost smoking.
Step 2:In a large mixing bowl combine all ingredients except steamers and mix well. Season to taste with salt and freshly ground pepper. Pour this mixture into the heated cast iron skillet and let it reduce by half.
Step 3:Add steamers and cook until all steamers are open, approximately 2 to 3 minutes. Discard any steamers that do not open. Serve immediately.
